Lemon Garlic Shrimp & Broccoli Sheet Pan | Paleo, Whole30, Keto


Busy weeknights were made for sheet pan meals, and I can't wait for you to give this one a try!

This covers your protein & veggie for a super simple low carb option.  Want a little something more?  We also love this served alongside white rice or some smashed gold potatoes!  Some creamy Garlic Ranch Mashed Potatoes could be pretty amazing too!


The main ingredients at play in this easy recipe are shrimp & broccoli (the rest you probably have on hand in your pantry/fridge!)

Shrimp is one of our favorites for weeknights because we can store it frozen (we LOVE the Red Argentinian shrimp from Trader Joe's) and it thaws so fast in the sink.

A bag of broccoli is just a grocery trip (or Instacart order) away, and we always seem to have that on hand too!


Toss it all on a sheet pan, season... you guys.  It doesn't get easier, but it seriously tastes SO GOOD.

The flavors here are some of my favorites - can't go wrong with a lemon garlic combo!

I also love how convenient this is for leftovers, because they taste just as good cold as they do warmed up!  So great to take along with you to work when you may or may not have the opportunity to heat up your food.


Eating on the road?  Keep an ice pack in your lunch bag, and eat it cold in your car!  I have eaten plenty of car meals from glass containers in my day, and this would be a perfect one.

Ingredients:

  • 1 lb shrimp
  • 3 cups broccoli florets
  • 2 Tbsp olive oil, divided
  • 1 Tbsp ghee, melted
  • 1 to 2 Tbsp minced garlic 
  • 1/2 tsp dried herb blend of choice (I like this one on everything)
  • juice & zest of 1 lemon
  • pinch red pepper flakes
  • salt & pepper to taste


Directions:

  1. Preheat the oven to 400ºF.
  2. Arrange the broccoli on a sheet pan in a single layer, then drizzle with 1 Tbsp of olive oil and season with salt & pepper.  Bake for 15 minutes.
  3. Meanwhile, add the shrimp to a large bowl and combine with 1 Tbsp olive oil, melted ghee, dried herbs, lemon juice, red pepper flakes, and salt & pepper.  Stir and set aside.
  4. After 15 minutes, remove the broccoli from the oven and add the shrimp to the sheet pan.  
  5. Sprinkle the minced garlic and lemon zest over top, then return to the oven for 10 minutes or until the shrimp are cooked through but still tender.
  6. Serve, and enjoy!


*Notes:

  • We love the large Red Argentinian wild caught shrimp from Trader Joe's - but any shrimp will do!  We get peeled & deveined for convenience.
  • Try served over white rice (if you do grains), baked sweet potato, or smashed gold potatoes.
  • A little "Everything But the Bagel" seasoning tastes amazing sprinkled over top!
