Chicken Bacon Ranch Dip | PALEO, Whole30


Ready for the easiest game day recipe ever, that also happens to be squeaky clean & Whole30 compliant?  ... Yes?!  I thought you might be.

This dip is what my Whole30 dreams are made of:  chicken, bacon, and ranch.  Is there a better flavor combo out there!?  And the fact that it can be done so quick & easy with Paleo & Whole30 ingredients leaves me wondering just one thing... why I didn't come up with this sooner!



Best part about this is that there's no need to restrict it to Super Bowl Sunday- you can totally meal prep this dish & serve it up so many different ways.  Scoop it over a baked sweet potato, turn it into a chilled "chicken salad" over greens, or serve it alongside roasted veggies.  It's so versatile, but oh my goodness: SO delicious!


I made mine with 1 1/2 cups ranch for a thicker, chunkier dip.  And boy was it good (we may or may
not have eaten it straight from the dish, with a fork).  But if you're in the mood for something extra saucy and perfect for dipping those Crispy Seasoned Potato Wedges, definitely bump up the ranch to two cups!

So whether you're all about Tom Brady the Patriots, or you're rooting for the Eagles, or you're just there for the food & commercials, don't show up for the Super Bowl without this dish!  And honestly, maybe make a double batch and save some for your lunches while you're at it.  Because who wants to meal prep on Super Bowl Sunday!?

Ingredients:

  • 3 cups cooked chicken, shredded
  • 1 1/2 to 2 cups dairy-free ranch dressing*
  • 1 cup baby spinach, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt & pepper, to taste
  • 4 to 6 slices cooked bacon*
  • optional garnish:  sliced green onions, drizzle of hot sauce, extra ranch


Tools Used:



Directions:

  1. Preheat the oven to 350ºF.
  2. Combine all of the ingredients in a mixing bowl, stirring until well combined.
  3. Pour into an 8 x 8" baking dish, and smooth over the top.
  4. Transfer to the oven, and bake for 30 to 35 minutes, or until the dip is golden and bubbly around the edges.
  5. Serve warm dipped with chips, sliced veggies, or roasted potato wedges, or scooped into lettuce leaves.


*Notes:

  • If you're making this Whole30, double check your ranch dressing for compliant ingredients.  My favorite is linked in the ingredients list above.  You can also make your own with homemade mayo!
  • Note that in my photos I've used 1 1/2 cups of ranch.  If you want this more "saucy" I would go up to 2 cups!  It's delicious either way, though.  
  • Whole30 compliant bacon can be hard to find!  Leave your favorite bacon brand in the comments below!  I get mine from ButcherBox.
