Cinnamon Sweet Potato Protein Bread ft. Vital Proteins Collagen Peptides


A few months back, I was very kindly sent a box of goodies to try from Vital Proteins.  Since then, I have been busy loving and relying on their products... every single day.  Our Collagen Peptides & Beef Liver capsules even made the journey to Austin, TX with us for Paleo f(x)!




Both Dathan & I had been long in search of a super squeaky-clean protein powder for post-workout shakes and mixing into recipes.  Dathan makes a shake every day after his CrossFit workouts, and I enjoy one from time-to-time as well as a snack or small meal replacement.  I also love protein powders for baked goods!

The trouble was, we were having a hard time finding a grass-fed protein that didn't have added sweeteners of any kind, but also didn't taste funky.  I also don't tolerate dairy well, and therefore wasn't responding well to whey proteins.

In came the Collagen Peptides, and after just one delicious post-WOD shake with no upset stomachs, we were both sold!



The Vital Proteins Collagen Peptides are flavorless and sugar-free, with just one single ingredient:  100% South American Pasture-Raised Bovine Hide Collagen Peptides.

Because that still might sound a little "out there" to some, let me break it down:  Collagen is the most abundant protein in the human body.  It's what holds the whole body together.  It's in our bones, muscles, skin, and tendons, where it provides strength and structure.  Collagen powder is made from beef hides, which are broken down & cooked to separate and filter the collagen from the tallow and skin.  The collagen is then evaporated & dried into a powder.

Pretty "amazing stuff", right?!  And when your body no longer makes enough of this "amazing stuff" (thank you, aging)... you will notice that it's missing:  wrinkles, joint pain, low bone density, thinning hair-- just to name a few effects.

Fortunately, with flavorless Collagen Peptides that dissolve in almost anything, you can supplement your diet with this essential nutrient and reap all of its benefits-- without any strange flavor or texture.


Here, in my "Protein Bread" I take some of my favorite flavors (cinnamon, sweet potato, and butter) and combine it with a solid dose of protein from whole, cage-free eggs & Collagen Peptides to create something anyone can enjoy.  Feed it to your children, your grandparents, or your co-workers, for breakfast, snack, or dessert!

Ingredients:

  • 1/2 cup sweet potato flesh (boiled, baked, or steamed)
  • 4 eggs
  • 1/2 cup Vital Proteins Collagen Peptides
  • 1/4 cup coconut flour
  • 1/4 cup grass-fed butter, melted
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 1 Tbsp coconut sugar (optional, for topping)

Tools:
  • 1.5 quart loaf pan
  • parchment paper
  • food processor or blender


Directions:

  1. Preheat the oven to 350ºF.  Line a loaf pan with parchment paper and set aside.  You can brush the parchment with melted butter for extra non-stick action.
  2. Place all of the ingredients, except for the coconut sugar (if you are using it), in a food processor or blender and pulse until a smooth batter forms.
  3. Transfer into the lined pan, sprinkle with coconut sugar, and bake for 30 minutes or until cooked through.
  4. Remove from the oven & allow to cool in the pan.
  5. Pull the loaf out by the edges of the parchment, and slice to serve.
  6. Store leftovers covered in the refrigerator.

*Notes:
  • The batter may look thin, or as if there's just "not enough" when you pour it inot the pan-- but have faith!  It will expand and rise as it bakes.
  • This won't rise as high as a typical bread, but the taste & amazing ingredients outweigh that small downside!
