Strawberry Shortcake Muffins

I came home to stay at my parents' house for the weekend, and found that my dad had brought home a giant flat of strawberries he picked up at a local roadside fruit stand.  I was feeling creative, which resulted in two new recipes packed full of fresh, delicious strawberries.  The first recipe I want to share with you guys is for these delicious muffins.

They taste just like mini strawberry shortcakes, and would be great with breakfast or as a light dessert.  My boyfriend came to visit, and I had these ready & cooled just in time for a snack when he got here.  He definitely approved of these little babies... I don't want to throw out numbers, so let's just say he ate more than you can count on one hand ;) 

My favorite part about these rich, moist, vanilla-laced muffins is that guilt is not one of the ingredients.  They are Paleo-friendly, which means no gluten, grains, dairy, soy, or refined sugars.  And they taste amazing.  You should try them out!  Let me know if you do, I would love to hear what you think!

Smoky-Sweet Grilled Chicken Breast


Hi everyone!  I thought I would stop by today & share a quick and easy recipe with you guys: my smoky-sweet grilled chicken breast.  This is great as a main dish, but also makes great leftovers- perfect for all you "meal preppers" out there.  Make up a big batch at the beginning of the week, and enjoy it over salad, tossed in soup, or stir-fried with a bunch of veggies.

Simple Paleo Lemon Bars

Since starting my blog, lemon bars have been at the top of my request list for sugary treats to "Paleofy".  

I've tested out a few healthy recipes in the past (my favorites were from Lindsay over at Delighted Momma); but, to be honest... I just felt like they were all too difficult to make as often as I wanted to.

Macadamia Cookie Butter (Paleo)

I'm back today with one of my favorite new creations... Cookie butter!  I was inspired by the coconut/nut butter spreads I've seen on Instagram & in various health food stores.  They look decadent and delicious & have awesome flavor variations, but are way too expensive!  So, I decided to make my own, in a flavor combination that I knew my boyfriend and family would love.  It was perfect to split up into little mason jars and bring as a little "gift-able" treat!


Macadamia nuts are full of nutrients that our bodies need.  They are high in the healthy monounsaturated fats that, when consumed, enhance good cholesterol and lower the risk of heart disease.  They are also a good source of protein, carbohydrates, and fiber - pretty awesome as far as nuts go!

When combined with creamy coconut, sweet dates, smooth vanilla, and a touch of sea salt- you've got the perfect spoonful, that tastes just like a macadamia nut cookie.  Serve it with a crisp green apple or a sliced banana, or eat it straight from the jar for a quick sweet tooth fix!
